Recipe – Salmon Burger


  • 1 1/2 pounds boned and skinned fresh wild salmon, cut into 1-inch cubes
  • 1 tablespoon drained capers, chopped
  • 2/3 cup organic panko (Japanese) bread crumbs
  • 1 tablespoon lemon juice
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 egg, beaten
  • 1 tablespoon butter
  • 4 hamburger buns, toasted


  • tartar sauce, Dijon mustard or dill sauce (choose one)


  • coleslaw



  1. In food processor, pulse the salmon cubes several times until coarsely ground flakes. Place ground salmon in large bowl: stir in capers, bread crumbs, lemon juice, pepper, salt and egg – mix until fully combined. Divide mixture into 4 firmly compressed patties.
  2. In a large sauté pan, melt butter over medium-high heat – add burgers and sauté, adjust heat as needed; cook until burgers are golden brown, then turn (2 – 2 1/2 minutes per side).


Spread tartar sauce, dijon mustard or dill sauce on inside of each toasted bun; place coleslaw on the base of bun, place a burger on top of slaw. Garnish with fresh organic sliced cucumbers and tomatoes. Serve immediately.
